Winter Berry Tart

In the oven

Winter in California, that is. We are incredibly lucky to have blueberries and raspberries at the market right now…and I’ll wager that the raspberries are better now than during the summer months! Thankfully, blueberries have made their way on to our West Coast agricultural landscape and love our winters here.

Pomegranates, which we have always enjoyed this time of year, are at their best! Park Farms has pint containers of the ruby seeds available, which make this tart a true 5 minute task.

Ingredients:

1-basket raspberries
1-basket blueberries
½ cup pomegranate seeds
Trader Joes frozen pie dough

I sprinkle the pomegranate seeds on first, then add the blueberries and top with raspberries. Throw it in the oven, 350-400 degrees. Bake until crust is done. That’s it. It makes a kind of dense fruit bar. I make these in muffin cups for the kids to take to school. Variations are endless, but one idea would be to spread goat cheese and strawberry sauce on the bottom of the tart and grate some lemon zest on top. Have fun experimenting!

In the oven

Here, the Winter Berry Tart has been in the oven for about 20minutes…it will go back in for another 15 minutes or so. I love the glass baking dish so I can check that the bottom looks nicely browned. I try to let it cool so the juices can set up a bit. I had a line at the counter today though and cut two servings while still pretty warm. Even warm, this is tart is moist and delicious without being runny at all. No sugar, flour, eggs or cream in the filling. Nothing but fruit. Bon Appetit!

February 7th will feature a juried craft event-shop, make and take. Several local etsy stars, patchwork alums & extremely talented crafters will be on hand to inspire.

March 7th is the All Day Read of The Soloist. Long Beach Reads One Book is a fabulous two-week event sponsored by the Public Library Foundation. Many exciting events take place all over Long Beach and we are incredibly proud that our market will host a Book Week event. Our day will include the All Day Read, Cellists from local schools, & Musical Portraits by Vangie Ogg. Keep your eyes peeled for information about this special day!

April 4th we will recognize National Poetry Month
with students from Poly hosting a Poetry Slam.
