Rancho Gordo Christmas Limas!

A chicken in every pot, literally! Lots of cooking was done last evening. Roasting of chicken, poaching of chicken, followed by stock of chicken. Today I have three quarts of stock, 10 roasted potatoes, 6 large roasted sweet potatoes, 2 quarts shredded chicken, & 2 wish bones. That’s just the savory items.

As I ponder our Christmas Eve Dinner…I start to survey. Avocados, Cilantro, Corn Tortillas, Cilantro, Crema, Limes, Carrots, Celery, all of the above…and voila! The Christmas Limas from Rancho Gordo picked up from a recent trip to Napa jump out. A southwestern pozole (with liberties) is now on the menu. I am trying to get Rancho Gordo products for our farmers market…you can order them online for the time being…they are a wonderful high quality heirloom bean, that is not to be missed.

Need to go check the bean pot. Need to go to the Thursday Farmers Market for Pasillas. Merry Christmas Eve!
